Shannon Martinez continues to revolutionise plant-based cuisine through ventures including Melbourne restaurant Smith & Daughters, where meat-driven dishes are reimagined for rapturous diners. Her 22-year career to date includes publication of three cookbooks. A fourth is imminent.
Martin Boetz is a leader whose Thai-inspired restaurants always draw praise. The German-born, Australian-bred trailblazer is best known for Longrain Restaurant and Bar, the Surry Hills establishment he opened in 1999 after honing his skills in other venues. The equally acclaimed Longrain Melbourne followed. Boetz’s latest project is the Cooks Co-op, which grows and supplies premium ingredients to top restaurants.
South Australia’s Laura Sharrad found fame as a MasterChef runner up, going on to successful stints at both Orana and Andre’s Cucina. Today she leads two Adelaide restaurants – Nido and Fugazzi Bar & Dining Room – alongside her husband Max Sharrad.
