Eldridge is on the rise – already noted for her work across top restaurants and building buzz at every turn. Her start came alongside the legendary Mark Best at Sydney’s Marque. From there, buoyed by two major awards, Eldridge headed to Europe. Guy Savoy showed her how to roll a croissant; a stint at Massimo Bottura’s Osteria Francescana coincided with it securing first place in the World’s 50 Best Restaurants list.
Initially trained as a pastry chef, Eldridge is today based at Berowra Waters Inn in New South Wales, bringing seasonal produce to the fore in dishes also enhanced by native ingredients. This young gun simply doesn’t miss.
