Change is afoot. They’re celebrating the best in new-school beverages across a masterclass led by Marcell Kustos, Nick Tesar and Shanteh Wale, three Australian experts setting the pace.
Kustos is beverage director at Adelaide’s Restaurant Botanic – also known as Gourmet Traveller 2023 Restaurant of the Year – which offers a Temperance Pairing developed with the same care and nuance that guide its alcoholic equivalent. Infusions and ferments are just two of the highlights.
Melbourne star Tesar has amassed a suite of accolades, the latest Australian Bartender of the Year and runner-up in the global finals. He’s based at Bar Liberty, among founders of boutique spirits brand Marionette, and passionate about the possibilities of booze-free drinks.
Wale rose through the ranks at Sydney’s Quay to become its head sommelier, moving on from the role in early 2022 to focus on wine writing and her podcast Over A Glass.
Enjoy signature beverages from Kustos and Tesar, plus selections from Sobah and other low-no alcohol brands including Heaps Normal, NON, Monceau and Mischief Brew. Each is helping make the beverage scene more inclusive and delicious. The revolution was worth waiting for.
