Retrospective Evolution. The concept of looking back for inspiration to drive forward to a more sustainable and ethical future.

2022 South Australian Chef of the Year will be in her element at her home Penobscot Farm where she will create a six-course shared plate lunch with fresh and preserved Penobscot Farm produce the hero.

She will exclusively use fire for cooking to complement the raw and fermented produce, seasoning it all with fresh herbs from the garden.

Wine writer Katie Spain will select expressive, food-friendly wines from next-generation and emerging Clare Valley winemakers who have looked back to the old world or traditional techniques for inspiration. Will these wines shine a light on the future of the Clare Valley?

Weather permitting the event will be a long table lunch in the garden at Penobscot Farm. Otherwise, we will create a magical space in the old Shearing Shed.
