Analiese Gregory swapped top international kitchens for a new life in Tasmania – one that led her to grow, fish, hunt and forage for ingredients. She is among Australia’s brightest culinary talents: classically trained across restaurants including Le Meurice in Paris and Sydney fixture Quay, and now embracing the thrill of self-sufficiency.
The power of an open flame has long inspired Jake Kellie. He launched arkhé – South Australia’s fire-driven restaurant – following stints in venues including Singapore’s Burnt Ends and Heston Blumenthal’s three Michelin-starred The Fat Duck.
Christine Manfield is among Australia’s most celebrated chefs, a curious cook and perfectionist with a passion for travel and all its possibilities. She has led three impressive, dynamic restaurants – Sydney’s Paramount and Universal, plus [email protected] in London.
This is no barbecue. It’s culinary performance, a celebration of the primal forces that sustain us and the unforgettable meals created by those who harness them.
