Autumn – the mornings are cool, the grass green and the kitchen full of quinces, chestnuts, mushrooms, apples and pears. But that is not all that autumn provides.

Early in the morning you will make the most of nature’s larder and head out to forage ingredients from the forests, farms, producers and friends around Bright. You will learn how to look for wild produce and select nuts and seasonal vegetables. Then, head back to the cooking school for a hands-on class where these ingredients will form the basis of five delicious Italian-inspired dishes.

Classes include refreshments, lunch with wine and recipes to take home.

Patrizia Simone’s Country Cooking School – located in the heart of Bright, the purpose-built cooking school is fitted out with state-of-the-art equipment, set in a warm and welcoming environment where students later sit and eat together. Whether you are a casual cook or a dedicated enthusiast, once you spend time with chef Patrizia Simone, you will understand it takes more than a recipe to prepare an authentic Italian meal – and why it’s worth it.
