This fun workshop covers basic theory as well as the tactile pleasure of all the steps of making bread from wild yeast culture. The day is suitable for novices and those who want to experience another artisan’s approach to bread-making.

Learn the theory of the essential ingredients and the principal steps of bread making. Understand the “Bakers’ percentage” and how to modify instant yeast recipes for sourdough culture.

Experience hands on expanding the wild yeast (the live sourdough culture) and making a dough from wild yeast, flour, salt and water: mixing, kneading and folding a dough ready for first prove. Shape loaves for final proof, and slash and bake mature doughs.

Take home a bakers’ starter pack of wild yeast starter, one kilogram of organic flour, sourdough recipe as well as the dough you made to bake at home and the loaf you shaped, slashed and baked. You will need a basket to carry all this home.

Enjoy refreshments and sustenance of freshly baked sourdough delights.
