Dyers Steak Stable was founded in 1972 and it was the brainchild of Murray Dyer who had a vision of a restaurant in the rustic iconic period landmark. Formally, the stables of the Old British Queen Hotel, it dates back to the mid-1860s, hence the origin of the name. Dyers Steak Stable soon became the quintessential steak restaurant of Ballarat, applauded for fine food, wine and service, often fondly referred to in Ballarat’s elite’ class as an institution.
